Delicious broad bean fritters, sources of fibre, iron and vitamin C and flavoured with aromatic spices and herbs.

Ingredients for 4 portions

  • Chicken breast 400 g
  • Radicchio 300 g
  • Lemon 1
  • Almonds 40 g
  • Extra virgin olive oil 4 tbsp (40 g)
  • Onion 1
  • Carrot 1
  • Stalk of celery 1
  • Bay leaf to taste
  • Salt to taste
  • Pepper to taste

Preparation

1.

Prepare the chicken and boil it in salted water with diced carrot, onion, celery and a bay leaf.

2.

Serve with radicchio and dress with lemon juice, extra virgin olive oil, salt, pepper and almond flakes.
