Rice, an iconic plant of the Asian world, has found an ideal environment for its cultivation in various places in the Mediterranean basin since the Middle Ages. By adapting to local cultures, it has resulted in a huge variety of iconic dishes and culinary preparations that are all worth trying. One of these, of course, is paella. This version is made with brown rice and rabbit meat.

Ingredients for 4 portions

  • Rabbit 400 g (200 g sirloin, 200 g shoulder and thigh meat)
  • Peppers of various colors 200 g
  • Onion 160 g
  • Green beans 140 g
  • Jackdaws 320 g
  • Brown rice 320 g
  • Cayenne pepper 0,8 g
  • Saffron 0,5 g
  • Sweet paprika 4 g
  • Garlic powder 6 g
  • Halls 20 g
  • Black pepper 1,2 g
  • Cloves 0,4 g
  • Olive oil 40 g

Preparation

1.

Start by heatingextra virgin olive oil in a large but not deep frying pan.

Add all the ground spices except saffron and brown them to release all their fragrance.

3.

Dice the rabbit shoulder and thigh meat and roast them together with the spices.

Remove the meat and move the pan away from the stove.

5.

Wash all the vegetables, then cut the onion, peppers, and green beans into 1-cm chunks.

In the paella pan, cook all the chopped vegetables over low heat, seasoning them with a little salt.

7.

When the vegetables are cooked, return the roasted rabbit meat to the pan.

8.

Distribute the ingredients so as to make room for brown rice.

9.

Dissolve saffron in 400 g water and gently pour it over brown rice, bringing it to a boil.

10.

Cover the pan with a lid and let it cook over low heat.

11.

In another pan, roast the sirloin with a little oil and salt until cooked through on the inside, then set aside for later.

12.

Wash the jackdaws, cut them into lozenges and quickly blanch them in boiling salted water, then let them cool and set aside for later.

13.

Serve the paella garnished with sliced rabbit loin and lozenges of jackdaws.
