The name Chilaquiles comes from a word in the Aztec Nahuatl language, “chilaquilitl,” meaning pereroncini and green vegetables. Chilaquiles represent one of the most popular dishes in Mexican cuisine, with many regional variations. They are usually served for breakfast or dinner. In Mexico City, green chilaquiles are accompanied by onion, cream cheese, and cream and sometimes also served with scrambled eggs, fried eggs, meat, or chicken strips.

  • Green tomatoes 400 g
  • Hot green chili pepper 20 g
  • Garlic 10 g
  • Onion 100 g
  • Chicken broth 1,5 l
  • Coriander 30 g
  • Olive oil 60 g
  • Halls 10 g
  • Cream 100 g
  • Fresh cheese 200 g
  • Eggs 360 g
  • Tortillas 320 g

Preparation

1.

Put green tomatoes, hot green chili pepper, garlic and onion in a saucepan. Cover them with water and bring to a boil.

2.

Blend them together with the chicken broth and cilantro.

3.

Pour some oil into a saucepan and cook the salsa verde, adding salt.

4.

Cut the tortilla into triangles, arrange them on a baking sheet and bake them at 180° C for 12 minutes.

5.

Heat a frying pan, add a drop of oil and fry the egg.

6.

Serve the tortillas along with the salsa verde, cream cheese and egg.
