It is the most representative dish of Veracruz and is traditionally cooked with red snapper weighing no more than 500 grams to make sure the meat is tender. Usually the fish is cooked in the sauce, enriching the taste of the tomato and softening its intense red color .

Ingredients for 4 portions

  • Fish slices 600 g
  • Halls q.b.
  • Tomatoes 2 kg
  • Olive oil 85 g
  • New potato chips 200 g
  • Onion 100 g
  • Garlic 20 g
  • Bay leaves 5 g
  • Oregano 5 g
  • Parsley 20 g
  • Olives 60 g
  • Capers 20 g
  • Hot chili 4 pieces
  • Brown rice 185 g
  • Water 0,5 l
  • Oil 50 g
  • Onion 40 g

Preparation

1.

Start by salting the fish slices and letting them rest for 90 minutes.

2.

Blanch tomatoes in a pot of boiling water and remove the skin and seeds.

3.

Mince the pulp and drain it to remove all the water.

4.

Pour some olive oil into a frying pan, fry the new chips and remove them. Add finely choppedgarlic, tomato pulp and salt.

5.

Combine the bay leaves , oregano and finely chopped parsley and cook the tomatoes.

6.

Add the olives, capers, spicy chili peppers, new chips, and fish slices. Continue cooking for 7 minutes.

7.

Finely chop the onion and garlic.

8.

Heat a drop of oil in a saucepan and add the onion and garlic.

9.

Sauté them and add brown rice.

10.

Add salt and water.

11.

Cover the saucepan and cook for 20 minutes.

12.

Serve the fish accompanied by the rice.
