A different way to cook chicken, seasoning it with spices and combining it with rice. You will be amazed at the result!

Ingredients for 4 portions

  • Chicken breast 400 g
  • Medium-sized onions 2
  • Extra virgin olive oil 4 tbsp (40 g)
  • Paprika to taste
  • Chopped coriander to taste
  • Ginger to taste
  • Vegetable broth  to taste
  • Saffron 1 sachet
  • Basmati rice 320 g

Preparation

1.

Cut the chicken into pieces; peel and chop the onions.

2.

Brown the onions, then add the chicken. Season with paprika, chopped coriander and ginger.

3.

Add a little broth and cook, adding saffron at the end and seasoning with salt.

4.

Rinse the rice to get rid of the excess starch.

5.

Bring 2 cups of water to the boil, add the rice and boil for 2 minutes. Cover with a lid and cook on low heat for about 18 minutes.

6.

You want almost all the liquid to be absorbed by the end of cooking.

7.

Gently fluff the rice with a fork to separate the grains, adding a drizzle of extra virgin olive oil, then mix in with the chicken in a bowl and serve.
